Description
In Ayurveda, cooking seasonally is considered essential, as it aligns the diet with nature’s rhythms and provides the nutrients and energetic qualities needed to maintain balance through each season’s unique challenges. This workshop explores the benefits of using fresh, local fall ingredients and demonstrates how to create flavorful, nourishing meals with autumn’s harvest. Karuna Diedericks will guide participants in supporting digestive health during the season and share techniques for working with the comforts of root vegetables, squashes, apples, and warming spices. Seasonal autumn cooking fosters a deeper connection to nature’s cycles and helps maintain balance as temperatures cool and air becomes drier. Participants will fine-tune their culinary skills to cultivate greater harmony with their environment.
Karuna Diedericks is a certified Ayurveda practitioner from the California College of Ayurveda, and trained in culinary medicine through Harvard Medical School. Her training allows her to bridge the gap between nutrition science and practical cooking skills. Karuna specializes in empowering individuals to take control of their health through home-cooking, mindful eating and lifestyle choices. At the Jung Center, she has been teaching cooking and nutrition classes, hosting special dinner events, and catering since 2018.
